New Year. New Me. Yeah…I Said It.

I had this whole lame New Year post in mind for January 1st. Shocker, I never posted it. It’s in my drafts as I write this. However, tonight I really had an eye-opening moment. And I’m here to share because I think there are others that may need to hear what I have to say.

My Botox Experience

I turned 38 this year. Though most would never guess my age, at some point over the last few years I started really noticing deep lines in my forehead. It’s one of those things that once you notice it, you can’t unsee it.

Cauliflower Wraps

If you are like me, you often get bored with eating the same foods day in and day out. I am always excited when I find something new to incorporate into my meals or snacks. Finding new foods to eat can sometimes be difficult if you’re trying to make healthy choices or have certain dietary restrictions.

As often as I can, I try to avoid eating grains.  This is a personal preference based on my health. I stumbled upon these Caulipower Viva Cauliflower Tortillas at Target and it’s changed my healthy eating game. Using these has allowed me to change up my meals and that’s a huge win for me!

I use these cauliflower tortillas on taco night, but my favorite way to eat these so far, is for breakfast! I heat some olive oil up in a pan and get the tortilla nice and crispy. I top it with eggs that I leave nice and gooey inside. (Look, I’m no egg expert. I’d say Sunny Side up, but I feel that’s not accurate. We will just call them gooey.) I then add avocado, sriracha, and everything bagel seasoning. The combo of textures and flavors is everything!

I also really enjoy these cauliflower tortillas with shredded chicken, avocado, taco seasoning, and sriracha. Since I also try not to eat dairy, I use these daiya dairy free cheddar style shreds. They are AMAZING. (I was just on their website and realize they also ave mexican style, mozzarella style, and many more!) I had my doubts when I bought them, but they’re so rich and creamy. Dare I say they are actually better than real cheese?!

And lastly, styling these tortillas up like a pizza are a tasty option. I used pepperoni, but very few. Also topped with a small amount of sauce, cheddar style shreds, and some spinach. The more toppings the better, but this was all I had at the time. (Don’t mind the paper plate – was family movie and pizza night. Very casual.

I hope these suggestions have helped someone on the hunt for some new healthy eating options. Have you used these, or similar, cauliflower wraps? Drop some recipe ideas in the comments!

Giant Mermaid Scale Number for Birthday Party

I prepared for my daughter’s 5th Birthday Party months in advance. We ended up having to cancel both her friend and family parties due to Covid. We still decorated the hell out of the house and had cake and presents. I think that was more than enough to make her happy!

I’ve had many people asking how I made the large mermaid scale number 5. Though time consuming, it was quite easy!

Missing My Dad

It has been almost three years since my Dad has passed away. So many times I’ve thought about writing about his life, his final days, and my grief. However, I’ve just not been able to do it. The more time that passes, the harder it is to accept he’s gone. The shock has worn off and the longer I go without seeing or speaking to him, the more real it becomes.

Golden Milk Latte

I’ve been wanting to make Golden Milk for some time. I finally remembered to grab Turmeric while at the store recently, so I gave it a shot today.

It was delicious! It’s filling and should prevent me from snacking so much. I think I will have it every evening, because that’s usually when I want to snack and make bad food choices. I may cut the amount of honey in half, though.

I warm up 2 cups of Unsweetened Vanilla Almond Milk. (Not too warm as I don’t want to ruin the benefits of the raw honey.) Then I add 1 tsp of Turmeric, 1/2 tsp Ginger, 1/2 tsp cinnamon, 1/4 tsp Nutmeg, and 2 Tbsp raw honey. I used my frother to give it all a good whip, and that’s it!

Trader Joe’s Haul and Breakfast

I recently made my maiden voyage to Trader Joe’s. Is December not the best time to break your Trader Joe’s seal? I really had to hold back. I tried to buy a lot of healthy items that I would eat for breakfast and lunch while working from home. However, I also splurged on some sweet treats.

I bought all of our kids’ teachers Belgian Truffle Ballotin boxes, and a box for the family. Other sweet treats included mini iced gingerbread cookies and decked out Christmas tree cookies. My favorite items purchased were the Holiday Vegetable Hash, Turkey Cranberry Apple Salad (I ate the entire container in one sitting), Avocado Tzatziki Dip, Spiced Chai Black Tea Concentrate, and Hand Twisted Cinnamon Sugar Bread.

My Weight Loss

While I am proud of my progress, my before and after photo is so hard to see. But, I’m going out on a limb and sharing the photo along with my story.

July 2019

We bought a used boat in the summer of 2019. Naturally, I ordered two new swimsuits to wear on said boat. I loved the suits, which were high-waisted two-pieces. I knew that I still had a “baby belly”, though my baby was now 3 years old. On July 28, 2019, (Yes, I remember that date) I asked our son to snap a picture of my husband and me on the boat together. When I saw the series of pictures he snapped, I was devastated. I should back up and say that I had been struggling with my appearance for a while. I don’t know why I thought these swimsuits would change anything. I hated how I looked. That wasn’t me. I looked swollen and my face was so puffy my eyes didn’t look open. I am all for body positivity, but I’m also one who believes you are in control of your own happiness. I hadn’t been happy with myself for some time and it took this picture to make me realize what I needed to do.
