If you are like me, you often get bored with eating the same foods day in and day out. I am always excited when I find something new to incorporate into my meals or snacks. Finding new foods to eat can sometimes be difficult if you’re trying to make healthy choices or have certain dietary restrictions.
As often as I can, I try to avoid eating grains. This is a personal preference based on my health. I stumbled upon these Caulipower Viva Cauliflower Tortillas at Target and it’s changed my healthy eating game. Using these has allowed me to change up my meals and that’s a huge win for me!
I use these cauliflower tortillas on taco night, but my favorite way to eat these so far, is for breakfast! I heat some olive oil up in a pan and get the tortilla nice and crispy. I top it with eggs that I leave nice and gooey inside. (Look, I’m no egg expert. I’d say Sunny Side up, but I feel that’s not accurate. We will just call them gooey.) I then add avocado, sriracha, and everything bagel seasoning. The combo of textures and flavors is everything!
I also really enjoy these cauliflower tortillas with shredded chicken, avocado, taco seasoning, and sriracha. Since I also try not to eat dairy, I use these daiya dairy free cheddar style shreds. They are AMAZING. (I was just on their website and realize they also ave mexican style, mozzarella style, and many more!) I had my doubts when I bought them, but they’re so rich and creamy. Dare I say they are actually better than real cheese?!
And lastly, styling these tortillas up like a pizza are a tasty option. I used pepperoni, but very few. Also topped with a small amount of sauce, cheddar style shreds, and some spinach. The more toppings the better, but this was all I had at the time. (Don’t mind the paper plate – was family movie and pizza night. Very casual.
